  • 1/2 medium onion
  • 1/2 cucumber
  • 2 Cheongyang chili peppers (optional, adjust for spice level)
  • 2 hard-boiled eggs

Broth Ingredients

  • 1 cup (200ml) water
  • 1.5 packets of store-bought naengmyeon (cold noodle) broth
  • 1/2 tablespoon sugar
  • A pinch of toasted sesame seeds

First, prepare the well-fermented yeolmu kimchi, which is the key to delicious chilled yeolmu kimchi noodles. If your kimchi is too sour, use less brine; if it’s bland, add plenty of brine.

Wash the cucumber thoroughly and julienne it thinly. Peel and thinly julienne the onion. Finely chop the Cheongyang chili peppers for a bit of heat. (Omit or reduce the amount if you don’t like spicy food.)

In a large bowl, combine the prepared yeolmu kimchi (both solids and brine), 1.5 packets of store-bought naengmyeon broth, and 1 cup of water. Taste and adjust the seasoning of the broth as needed. If you prefer it colder or more flavorful, add more naengmyeon broth or water.
