Main Ingredients

  • 2 Chicken Breasts
  • 1/4 Carrot
  • 1/4 Onion
  • 1/4 Cucumber
  • 1/4 Bell Pepper (using various colors makes it more visually appealing)

Dressing

  • 0.5 Tbsp Prepared Mustard
  • 2 Tbsp Vinegar
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Allulose (sugar substitute)
  • 0.5 Tbsp Minced Garlic

Optional Ingredient

  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

First, wash all the vegetables thoroughly. Julienne the carrot, onion, cucumber, and bell pepper into thin strips. Feel free to add other crisp and delicious vegetables of your choice for extra texture and flavor.

Step 2

In a pot, add enough water to cover the chicken breasts. For enhanced flavor and to remove any gamey smell, add 1-2 bay leaves and a pinch of black pepper. Bring the water to a boil over high heat, then reduce to medium-low and simmer for 15 minutes, or until the chicken is fully cooked through.

Step 3

Now, let’s make the delicious dressing. In a small bowl, combine 0.5 Tbsp of prepared mustard, 2 Tbsp of vinegar, 3 Tbsp of soy sauce, 2 Tbsp of allulose (for a guilt-free sweetness), and 0.5 Tbsp of minced garlic. Whisk everything together with a whisk or spoon until well combined and smooth, with no lumps.

Step 4

Take a large, flat serving plate. Arrange the julienned vegetables around the edge of the plate, creating a colorful border. Leave the center empty to place the chicken breast later.

Step 5

Once the chicken breasts have cooled slightly after boiling, shred them into bite-sized pieces using your hands. Shredding allows the dressing to penetrate better, making it more flavorful. Arrange the shredded chicken in the center of the prepared plate. Drizzle generously with the prepared dressing. Finally, sprinkle a pinch of sesame seeds for a nutty aroma.
