Main Ingredients- 300g fresh Chanamul (Korean potherb)
- 1/2 medium Onion
- 1/4 medium Carrot
- 1 Green chili or Jalapeno (adjust to your spice preference)

Step 1
First, thoroughly wash all your vegetables. Rinse the chanamul several times under running water to remove any dirt or debris, then shake off excess water. Peel the onion and thinly slice it into matchsticks. Wash the carrot and green chili, then julienne them. Preparing all the vegetables by slicing them thinly will ensure the dressing is evenly distributed for a more flavorful salad.
Step 2
In a mixing bowl, place the prepared chanamul and add 2 tablespoons of fish sauce. Let it sit for about 5 minutes to slightly wilt the chanamul; this helps it absorb the dressing better. After the chanamul has softened a bit, add the julienned onion, carrot, and green chili. Now, add 2 tablespoons of gochugaru, 1 tablespoon of sugar, and 1 teaspoon of salt. Gently toss everything together with your hands until well combined, being careful not to mash the vegetables. Taste and adjust the amount of fish sauce, sugar, and salt according to your preference.
Step 3
Just before serving, add 1 tablespoon of vinegar and gently toss once more. Adding the vinegar at the end preserves its fresh, tangy flavor, making the dish extra refreshing. Transfer the finished chanamul and onion salad to a serving dish. Sprinkle 1 tablespoon of toasted sesame seeds over the top for added nutty aroma and taste.
