Sometimes, eating store-bought bibim-myeon can feel like you’re just eating plain noodles. This recipe is perfect for using up those leftover vegetables in your fridge! Add them to your bibim-myeon for a vibrant, refreshing, and more nutritious meal. Enjoy the crisp textures and delightful flavors!

Ingredients

  • 1 packet of store-bought bibim-myeon noodles
  • 4 perilla leaves (kkaennip)
  • A little cucumber (about 1/4 small cucumber)
  • A little red onion (about 1/4 small red onion)
  • A handful of bean sprouts (optional, depending on preference)
  • A few ice cubes (to make it extra cold)

Cooking Instructions

Rinse the bean sprouts thoroughly. Boil them in water for about 3-5 minutes until they are tender but still retain a slight crispness. Avoid overcooking them.

Cook the bibim-myeon noodles according to the package directions (usually about 3-4 minutes). If you plan to cook the bean sprouts with the noodles, add them during the last minute of the noodle cooking time. Once cooked, rinse both the noodles and bean sprouts thoroughly under cold running water. Drain them well in a colander. This step is crucial to prevent the noodles from becoming mushy and to achieve a delightful chewy texture.

In a large mixing bowl, add the bibim-myeon sauce packet. Then, add a few ice cubes. The ice will help keep the dish refreshingly cold and also aid in mixing the sauce evenly with the noodles.

Add the drained noodles to the bowl with the sauce and ice. Toss everything together thoroughly with chopsticks until the noodles are well coated with the sauce. Ensure every strand is seasoned for maximum flavor.
