Refreshing Arugula Pasta
A Chilled Arugula Pasta Recipe
We make arugula pesto from the arugula harvested from our garden, enough to last us a year! This chilled arugula pasta, bursting with the fresh flavors of midsummer arugula, has become our signature dish. Its exotic, nutty taste and incredible aroma make it a frequent favorite. Experience a unique pasta that captures the essence of fresh vegetables!
Main Ingredients
- 1 package pasta (choose your favorite type)
- 4 tablespoons arugula pesto
- 1 tablespoon coarse salt (for boiling pasta)
- 1/2 teaspoon ground pepper
- 4 tablespoons grated cheese (e.g., Parmesan or Grana Padano)
- 2 medium tomatoes
Cooking Instructions
Step 1
Fill a large pot with 2 liters of water and bring it to a rolling boil over high heat. Boiling the water adequately ensures the pasta doesn’t stick together and cooks evenly.
Step 2
Once the water is boiling vigorously, add 1 tablespoon of coarse salt and then add the pasta. Refer to the package instructions for cooking time, but aim for ‘al dente’ by cooking for 1-2 minutes less than recommended, or for a softer texture, cook for an extra minute. Typically, 5-7 minutes is ideal.
Step 3
While the pasta is cooking, thoroughly wash the fresh tomatoes and chop them into bite-sized pieces. Cherry tomatoes also work wonderfully.
Step 4
When the pasta is cooked to your liking, drain it thoroughly using a colander. Allow some of the hot steam to dissipate for a moment.
Step 5
Transfer the cooked pasta to a large bowl. Add the arugula pesto and 1/2 teaspoon of ground pepper, and toss well to combine. Taste and adjust the amount of pesto as needed. You can add a tiny pinch of salt if necessary.
Step 6
Arrange the finished arugula pasta on a serving plate. Sprinkle generously with 4 tablespoons of grated cheese and top with the chopped red tomatoes for a vibrant finish. Your fresh and aromatic Arugula Pesto Pasta is ready!
