Main Ingredients

  • 150g fresh seaweed (Toss)
  • 1 handful radish
  • 1/2 onion
  • 3 Tbsp toasted sesame seeds

Seasoning

  • 4 Tbsp Gochujang-vinegar sauce (Cho-gochujang)
  • 1 Tbsp minced garlic
  • 1 Tbsp red pepper flakes (Gochugaru)
  • 1 Tbsp vinegar

Cooking Instructions

First, rinse the fresh seaweed thoroughly under cold running water to remove any debris. Blanch the seaweed in boiling water for approximately 40 seconds – just a quick dip to slightly soften it without making it mushy. Immediately rinse it under cold water to stop the cooking and drain it well, squeezing out excess water. This keeps the texture pleasantly chewy.

Thinly slice the radish into matchsticks. Place the julienned radish in a bowl, sprinkle with a little salt, and let it sit for about 5 minutes to lightly pickle. After pickling, rinse it gently under water and squeeze out any excess moisture. This step ensures the radish stays crisp and absorbs the flavors beautifully.

Peel and thinly slice half an onion into fine shreds. Slicing the onion thinly will help it meld well with the seaweed and radish when mixed, and it also softens its pungent flavor.

In a mixing bowl, combine the well-drained seaweed, the crisp radish matchsticks, and the thinly sliced onion.
