A perfect choice for those hot summer days when your appetite is low! This recipe features kimchi noodles with a delightful sweet and sour, refreshing taste, combining store-bought naengmyeon broth with crisp kimchi and cool cucumber. It’s easy to make, so anyone can enjoy it.

  • Somen noodles (for 2 servings)
  • 2 pouches store-bought naengmyeon broth (approx. 1.5-2L)
  • 1/4 cucumber
  • 1/4 cup well-fermented kimchi
  • 1 sheet flat fish cake
  • 2 Cheongyang peppers

Seasoning and Toppings

  • 1 Tbsp sesame seeds

First, prepare the ingredients for the toppings. Wash the cucumber thoroughly and julienne it thinly. Julienne the flat fish cake to a similar thickness. Finely mince the Cheongyang peppers after removing the seeds. If you like it spicy, you can mince them with the seeds.

Finely chop the kimchi using scissors or a knife into bite-sized pieces. If they are too large, they can be inconvenient to eat with the noodles. Chop them into pieces that are easy to eat.

Now, let’s cook the somen noodles. Add the somen noodles to a large pot of boiling water and cook for 3-4 minutes. Stir occasionally to prevent the noodles from sticking together. Pouring a little cold water when the noodles boil up will make them chewier and more resilient. Repeat this process 2-3 times.

Once the somen noodles are cooked, drain them in a colander and rinse them thoroughly under cold running water to remove excess starch. This makes the noodles cleaner and chewier. Finally, squeeze out any excess water with your hands.

Arrange the cooked somen noodles attractively in a bowl. Pour the 2 pouches of store-bought naengmyeon broth over the noodles. If the broth’s flavor is lacking or too bland, you can adjust the taste by adding a little sugar or vinegar according to your preference. Adding a bit of kimchi juice is also a great option if you want a spicy kick.
