This recipe brings out a wonderfully tangy and sweet flavor using fresh tomatoes, perfect for beating the summer heat and stimulating your appetite. It’s a simple yet satisfying dish that’s also a great light meal alternative to rice.
Main Ingredients- 1 serving of Somyeon noodles (approx. 100g)
- 160g Ripe tomatoes
- 1 Tbsp Sesame seeds
- 1/2 Cucumber
Special Bibim Sauce- 1/2 Tbsp Soy sauce (jin-ganjang)
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Vinegar
- 1 tsp Sugar
- 1 Tbsp Corn syrup (oligosaccharide)
- 1 Tbsp Minced garlic
- 2 Cheongyang peppers (finely minced)
- 1/2 Tbsp Gochugaru (Korean chili flakes, fine grind)
- 1/2 Tbsp Soy sauce (jin-ganjang)
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Vinegar
- 1 tsp Sugar
- 1 Tbsp Corn syrup (oligosaccharide)
- 1 Tbsp Minced garlic
- 2 Cheongyang peppers (finely minced)
- 1/2 Tbsp Gochugaru (Korean chili flakes, fine grind)
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Wash the cucumber thoroughly under running water. Then, cut it into thin matchsticks about 2-3 cm long, discarding the seedy core. Core the tomatoes and cut them into bite-sized pieces, approximately 2cm. Cutting them to a manageable size ensures they mix well with the noodles.
Step 2
Now, let’s make the star of this dish: the delicious sauce! In a bowl, combine 1/2 Tbsp soy sauce, 2 Tbsp gochujang, 2 Tbsp vinegar, 1 tsp sugar, and 1 Tbsp minced garlic. Add 2 finely minced Cheongyang peppers for a spicy kick, and 1 Tbsp corn syrup for sweetness and gloss, along with 1/2 Tbsp fine gochugaru for extra color and flavor. Stir everything together well with a spoon until the sauce is smooth and well combined.

In a large mixing bowl, add the prepared 1 serving of somyeon noodles, the sliced tomatoes, and the crisp cucumber. Pour all of the special bibim sauce over the ingredients. Now is also a good time to sprinkle in 1 Tbsp of sesame seeds for added nutty flavor. Gently toss everything together with your hands to ensure the sauce evenly coats the noodles and vegetables. Be careful not to overmix, as this can make the noodles mushy. A gentle toss is best!
