Cooking Instructions

Step 1

Hello everyone! Today, I’m sharing the golden recipe for a refreshing and spicy Squid and Radish Soup that will warm you up on a chilly day. It’s not difficult, so if you follow along step-by-step, anyone can make a delicious soup. Shall we start cooking this tasty soup?

Step 1

Step 2

First, let’s prepare the Korean radish, which is key to the flavor of our soup. Wash and peel the radish, then slice it into thin, rectangular pieces about 0.5cm thick, perfect for simmering in the pot. Slicing it to the right size helps release its refreshing flavor into the broth.

Step 2

Step 3

Next, we’ll clean the squid. Remove the ink sac and backbone, peel off the skin, and then cut the squid into bite-sized pieces, about 1-2cm in length. Cutting them too small might cause them to shrink significantly when cooked, so aim for a moderate size.

Step 3

Step 4

Now, let’s season the broth. Pour 600ml of stock into a pot. Add 1 teaspoon of soup soy sauce, 1 teaspoon of minced garlic, and 2 teaspoons of gochugaru. These seasonings will add a spicy kick and a savory depth to the soup. If you find it’s not salty enough, add a pinch of salt to adjust the taste to your preference. Then, add the sliced radish to the pot and bring it to a boil.

Step 4

Step 5

Add 1 teaspoon of gochujang to the soup to give it a spicy and savory flavor. The gochujang will dissolve gently into the broth, creating a richer taste.

Step 5

Step 6

Finally, prepare the green onions for an aromatic touch. Chop about a handful of green onions and add them to the pot. The fragrance of the green onions will further enhance the soup’s flavor.

Step 6

Step 7

With all the ingredients ready, bring the soup to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10-15 minutes, or until the radish becomes translucent and tender. Your delicious Squid and Radish Soup is now complete! Enjoy it with a warm bowl of rice.
