Refreshing and Spicy Squid and Radish Soup
How to Make Squid and Radish Soup / Spicy Soup Recipe / Super Simple Broth Dish
Feeling undecided about what soup to make when you need one in a hurry? Squid and Radish Soup is incredibly quick to prepare, making it perfect for busy days! It pairs wonderfully with any side dish, and the refreshing radish combined with a spicy broth is excellent, even as a hangover cure! ^^
Main Ingredients- 2 squid
- 100g radish
- 1 chili pepper (preferably Korean green chili)
- 1/2 stalk green onion
Seasoning Ingredients- 600ml dried kelp broth
- 1 Tbsp soy sauce for soup
- 1 Tbsp fish sauce (anchovy)
- 1/2 Tbsp minced garlic
- 2 Tbsp perilla oil
- 1 Tbsp red pepper flakes
- 1/8 Tbsp salt

Cooking Instructions
Step 1
Thinly slice the radish into 1-2mm thick pieces, or cut it into roughly 1.5cm cubes. Slicing it thinly will help it cook faster and make the process more convenient.
Step 2
Clean the squid by removing the ink sac and cartilage, then cut it into bite-sized pieces (about 2-3cm). (You can adjust the amount of squid based on your preference; if you love squid, one per person is great!)
Step 3
Heat 2 tablespoons of perilla oil in a pot over medium-low heat.
Step 4
Add the sliced radish and prepared squid to the pot. Sauté for about 2-3 minutes until the radish becomes slightly translucent. Sautéing beforehand enhances the savory flavor of the squid and the sweetness of the radish.
Step 5
Once the radish and squid are sufficiently sautéed, pour in 600ml of dried kelp broth. Using kelp broth will give the soup a deeper and more refreshing flavor.
Step 6
Now, add the seasoning ingredients to flavor the broth. Stir in 1 tablespoon of red pepper flakes, 1 tablespoon of soy sauce for soup, 1 tablespoon of fish sauce, and 1/2 tablespoon of minced garlic. Using fish sauce adds an extra layer of umami.
Step 7
For an extra kick of spiciness, add 1 Korean green chili pepper, thinly sliced diagonally after removing the seeds. If you enjoy it very spicy, you can leave the seeds in.
Step 8
Finally, add 1/2 stalk of green onion, sliced diagonally, and bring the soup to a gentle boil. You’ll notice a delicious aroma as the ingredients meld together.
Step 9
Taste the soup and adjust the seasoning with 1/8 tablespoon of salt if needed. (The flavors from the radish, squid, and seasonings are often sufficient, but adjust according to your personal preference.)
Step 10
