  • 2L Water
  • 3 Tbsp Coarse Salt (for purging and seasoning)
  • 2 Tbsp Minced Garlic
  • 1 Cheongyang Pepper, seeds removed and finely chopped
  • 1/2 Scallion, thinly sliced diagonally

Cooking Instructions

The mussels I’m using today were already purged. However, I’m rinsing them under cold running water to remove any remaining thin beards or debris. If the shells are dirty, gently scrubbing them with a brush is a good idea.

Place the cleaned mussels into a large, deep pot and add 2L of cold water. Bring to a boil over high heat. Mussels release their own flavorful broth, so don’t add too much water. Start the cooking process.

As the water begins to boil, impurities and foam will rise from the mussels. To ensure a clear and refreshing broth, carefully skim off this foam using a spoon or ladle. This step is crucial for achieving the clean taste of the mussel soup.

After skimming off the foam, add 3 tablespoons of coarse salt to season. It’s best to taste as you go and adjust the saltiness rather than adding it all at once. Next, add the finely chopped Cheongyang pepper. This adds a pleasant spiciness, which helps to cut through any potential fishiness from the seafood and enhances the overall flavor of the broth. Let it simmer for a bit longer to allow the flavors to meld.
