Kongnamul Guk, or bean sprout soup, is a quintessential Korean home-style dish known for its clear, refreshing taste, achievable even without a separate broth. It’s a perfect, simple menu item for any meal, especially recommended for a quick and satisfying breakfast. Here’s how to make it with a super easy recipe!

  • 200g fresh bean sprouts
  • 1 handful of green onions (about 1/2 stalk)

First, pour 2 liters (about 8 cups) of water into a pot. Place it over high heat and bring it to a rolling boil. A generous amount of water helps make the soup extra refreshing.

While the water is heating, wash the bean sprouts thoroughly under running water, ensuring all dirt and debris are removed. Lightly drain them. Thinly slice the green onions into strips.

Once the water begins to boil vigorously, add the washed bean sprouts to the pot. It’s best to let them cook uncovered to prevent any ‘fishy’ smell from developing.

As soon as the soup comes back to a boil after adding the sprouts, stir in 2 tablespoons of soup soy sauce, the handful of sliced green onions, and 1 tablespoon of salt. Add 1 tablespoon of minced garlic for enhanced flavor. A pinch of ginger powder is also recommended to eliminate any unwanted smell from the sprouts and add depth.

Let the soup simmer over medium heat for about 5 minutes, allowing the bean sprouts to cook through. Be careful not to overcook them; they should retain a slight crispness for the best texture.
