Ingredients

  • 1/4 Korean radish (mu)
  • 2 squids
  • 1.2L natural seafood broth
  • 3 Tbsp fish sauce
  • 1 tsp minced garlic

Cooking Instructions

First, prepare the radish. Slice it thinly into approximately 1.5cm thick pieces, then cut them into bite-sized squares. (For example, slice it thinly into rounds, cut each round in half, and then cut those halves into thirds to get a good size). Add 1-2 tablespoons of sesame oil to the cut radish and stir-fry over medium-low heat until the radish becomes translucent. This step is fundamental for developing the deep flavor of the soup.

Once the radish is sufficiently stir-fried, add the cleaned squid. You can cut the squid to your desired size, but cutting it into bite-sized pieces that match the radish will make it easier to eat. Add the squid and stir-fry together for about 1-2 minutes.

Pour 1.2L of the prepared natural seafood broth into the stir-fried ingredients and bring to a rolling boil over high heat. Once the broth boils, add 1 tsp of minced garlic and 3 Tbsp of fish sauce to season. (Green onions were omitted to prevent the soup from becoming cloudy, but you can add them according to your preference.) If you don’t have natural seafood broth, you can use anchovy and kelp broth. Once the soup boils again, reduce the heat to medium-low and let it simmer gently for about 10-15 minutes, or until the radish is completely transparent and tender.

Your nostalgic squid and radish soup, featuring the refreshing and sweet radish and the savory squid, is now complete. Enjoy a hearty meal with a warm bowl of rice. If you prefer a spicy kick, you can thinly slice 1-2 Korean chili peppers and add them just before serving for a zesty flavor.
