Hearty enough to be a meal on its own! This magical pollack and radish soup will have you finishing a bowl of rice in no time, even without other side dishes. The deep umami of pollack meets the crispness of radish for a fantastic flavor combination.

Main Ingredients

  • 510g Radish (about 1/3 of a medium radish)
  • 15g Dried Pollock (Hwangtae)
  • 1 stalk Green Onion
  • 1 Green Chili Pepper
  • 1/2 Red Chili Pepper

Seasoning

  • 1 Tbsp Grapeseed Oil
  • 1 Tbsp Sesame Oil
  • 3 Tbsp Anchovy Sauce (Myeolchi Aekjeot)

Cooking Instructions

Step 1

Prepare all the ingredients for a delicious pollack and radish soup. Wash and peel the radish. Prepare the dried pollack by tearing it into bite-sized pieces. Slice the green onion and chili peppers diagonally.

Slice the prepared radish into approximately 0.5cm thick strips. Slicing them not too thin will help maintain a pleasant texture in the soup and allow the radish to impart its refreshing flavor.

Briefly rinse the dried pollack under running water, lightly squeeze out excess moisture, and then cut into 2-3cm lengths. Place the prepared pollack in a pot. This step helps remove any fishy odor and enhances its nutty aroma.

Add 1 Tbsp grapeseed oil, 1 Tbsp sesame oil, and 3 Tbsp anchovy sauce to the pot with the pollack. Sauté over high heat until everything is evenly coated. Sautéing the pollack in oil makes it more savory and deepens its flavor.

Pour 1 liter of water into the pot with the sautéed pollack and bring to a rolling boil over high heat. Boiling at high heat initially helps to create a clear and refreshing broth.

While the broth is boiling, thinly slice the green onion diagonally, and do the same for the green and red chili peppers. These colorful ingredients will add visual appeal to your soup.

Once the soup begins to boil, reduce the heat to medium and simmer for another 5 minutes to allow the radish to release its refreshing flavor. Then, add the sliced green onion and chili peppers and continue to simmer for another 5 minutes. The aromatic green onion and mildly spicy chili peppers will further enrich the soup’s taste.
