Ingredients
- 1 bunch Chard (approx. 150-200g)
- 1 Tbsp Dried Shrimp
- 1/4 Scallion
- 1 Korean Green Chili (optional)
- 1 Tbsp Miso Paste
- 1/2 Tbsp Minced Garlic

Step 1
Properly preparing the chard is key for a tender soup. If your chard stalks are long and seem tough, lightly peeling the outer layer will make them much softer to eat. For this recipe, we’ll be adding Korean green chili for a bit of heat and fragrant scallions. Chop them finely. If you’re making this soup for children, you might want to omit the Korean green chili to keep it mild.
Step 2
Rinse the chard thoroughly under running water. We’re going to blanch it briefly. Bring a pot of water to a boil, add a pinch of salt, and add the chard. Blanch for less than a minute – overcooking can make it mushy! Immediately transfer the blanched chard to cold water and rinse several times to cool it down. Squeeze out as much water as possible, then cut the chard into bite-sized pieces, about 3-4 cm long. If your chard is very young and tender, you can skip the blanching step and cook it directly.
Step 3
Once the chard is squeezed dry, add 1 tablespoon of miso paste and 1/2 tablespoon of minced garlic. Gently mix them together with your hands to marinate the chard. Marinating it beforehand helps the flavors penetrate deeply. Now, let’s get the pot and broth ready.
Step 4
Pour about 500ml of broth or water into a pot and add 1 tablespoon of dried shrimp. Bring it to a boil. Using rice water (water from rinsing rice) will give the soup a cleaner, more savory flavor. Once the broth is boiling, add the marinated chard and let it cook. When the chard is tender, add the chopped scallions and Korean green chili. Simmer for a bit longer and your delicious chard soup is ready! Since the saltiness of miso paste can vary, taste the soup and add more miso if needed to adjust to your preference.
