Refreshing and Mild Oyster and Soybean Sprout Soup
A Soothing Oyster and Soybean Sprout Soup to Revitalize You
This soup was inspired by a recommendation that oysters are beneficial for nosebleeds, a concern for my younger daughter. I’ve prepared it with a light and gentle flavor. Oysters are packed with nutrients, so it’s the perfect time to enjoy them while they are in season. This clear, comforting broth is wonderfully revitalizing.
Ingredients- 150g fresh soybean sprouts
- 100g Korean radish (mu)
- 1 green chili pepper
- 1 red chili pepper
- 1/3 stalk of green onion (scallion)
- 1/2 block firm tofu
- 1 Tbsp salt
- 1 Tbsp fish sauce (or soy sauce)
- 1L anchovy-kelp broth (1L water with 1 piece of kelp)
Cooking Instructions
Step 1
Rinse the fresh oysters gently in coarse salt, shaking them lightly. Then, rinse them about twice more under cold water. Drain well. Oysters nowadays are often quite clean, making them easy to prepare.
Step 2
Trim the roots from the soybean sprouts and wash them thoroughly under running water. Be gentle to avoid damaging the sprouts.
Step 3
Peel the Korean radish and slice it thinly into bite-sized pieces (similar to half-moons). Adding radish truly enhances the refreshing taste of the broth. You can also julienne the radish if you prefer.
Step 4
Cut the firm tofu into bite-sized cubes.
Step 5
Slice the green and red chili peppers diagonally into thin pieces for color. Slice the green onion diagonally as well.
Step 6
In a pot, combine 1L of the anchovy-kelp broth with the prepared soybean sprouts. Bring to a boil over high heat. The sprouts will release a refreshing flavor as they cook.
Step 7
Once the soup comes to a boil, remove the kelp. Add the rinsed oysters and sliced radish to the pot and continue to simmer. To eliminate any fishy odor from the oysters, add 1 Tbsp of cooking wine (mirin). You can also add a splash of Korean rice wine (cheongju) or soju for a similar effect.
Step 8
When the oysters and radish are cooked, reduce the heat to medium-low. Add the sliced green onion and chili peppers. Season the soup with 1 Tbsp of salt and 1 Tbsp of fish sauce (or soy sauce). The fresh oysters will be plump and delicious, adding a wonderful depth of flavor to the soup. Enjoy your nourishing Oyster and Soybean Sprout Soup!
