Simple Tofu Kongguksu, Healthy Tofu Dish
Introducing a super simple Tofu Kongguksu recipe that’s perfect for a refreshing meal on a hot summer day. Made with tofu and soy milk, it’s creamy, nutty, and packed with protein, making it a nutritious dish the whole family can enjoy. Add the fun of noodles by using rice noodles!
Kongguksu Ingredients- 1/2 block tofu (approx. 150-200g)
- 1 cup soy milk (200ml, plain or unsweetened)
- 50g rice noodles (dry)
- 1 slice cucumber (for garnish)
- A pinch of roasted salt (adjust to taste)
Cooking Instructions
Step 1
Boil the rice noodles in warm water. Cooking them about 30 seconds to 1 minute less than the package instructions and then rinsing them in cold water will help maintain a chewy texture.
Step 2
In a blender, combine 1/2 block of tofu and 1 cup of soy milk. Blend until smooth and creamy. It’s important to blend thoroughly until there are no lumps for a velvety smooth broth. (Draining the tofu before adding it can result in a richer flavor.)
Step 3
Pour the prepared kongguksu broth into a serving bowl and add the cooked rice noodles. Thinly slice the cucumber into matchsticks and use as a garnish.
