Refreshing and Delicious Yeolmu Kimchi Noodles
Enjoy Refreshing Yeolmu Kimchi Noodles at Home
If you have well-fermented yeolmu kimchi (young radish kimchi), make these yeolmu kimchi noodles for the perfect summer dish to boost your appetite. You’ll experience a refreshing and cooling taste that will instantly chase away the heat.
Main Ingredients- 1 serving of somyeon noodles (approx. 100-120g)
- Adequate amount of well-fermented yeolmu kimchi
- 1/4 cucumber (julienned)
- 1/2 hard-boiled egg
- 200ml yeolmu kimchi brine
- 300ml store-bought naengmyeon broth
- 1 Tbsp vinegar (15ml)
Cooking Instructions
Step 1
Wash the cucumber thoroughly and julienne it thinly. Cut it to a similar length as the noodles for a balanced presentation.
Step 2
Cut the hard-boiled egg in half. This will be used as a topping.
Step 3
Fill a pot with plenty of water for boiling the noodles and bring it to a rolling boil over high heat.
Step 4
Once the water is boiling vigorously, carefully add the somyeon noodles, separating them so they don’t clump together.

As the noodles cook and the water starts to overflow,

pour in about one cup of cold water. Repeat this process 2-3 times; this will ensure the noodles are cooked to a chewy perfection. Drain the noodles immediately once they are cooked.
Step 7
Rinse the cooked noodles under cold running water, rubbing them gently. This removes excess starch, resulting in chewier and more refreshing noodles.
Step 8
Drain the rinsed noodles thoroughly in a colander. Ensure no excess water remains, as this can dilute the broth’s flavor.
Step 9
In a large bowl, combine 200ml of the yeolmu kimchi brine, 300ml of store-bought naengmyeon broth, and 1 tablespoon of vinegar.
Step 10
Mix these broth ingredients well to create a refreshing base. Taste and adjust with a little more vinegar or sugar if desired, according to your preference.
Step 11
Place the drained noodles attractively in a noodle bowl.
Step 12
Top the noodles with the prepared yeolmu kimchi, julienned cucumber, and half of the hard-boiled egg. Feel free to add other toppings as you like.
Step 13
Gently pour the prepared cold broth around the edges of the bowl. It’s best to pour enough broth to partially submerge the noodles, rather than drowning them.
