Main Ingredients

  • 1 Korean radish (approx. 1.1kg)

Tangy & Sweet Seasoning

  • 1 cup vinegar (180ml)
  • 8 Tbsp sugar (brown sugar recommended)
  • 1 Tbsp coarse gochugaru (Korean chili flakes)
  • 1/2 Tbsp fine gochugaru (Korean chili flakes)
  • 1 Tbsp salt (flower salt recommended)

Cooking Instructions

Step 1

First, let’s weigh the radish. Today’s radish is 1,135g in total (approx. 1.1kg). Please wash the prepared radish thoroughly.

Julienne the radish thinly. If you’re not confident with knife skills, using a mandoline slicer makes it quick and easy to get thin strips! (It saves a lot of time compared to julienning by hand.)

Take out about a handful of the julienned radish and set it aside. This reserved radish can be used later for making radish soup. (It’s especially delicious in perilla seed radish soup!)

Now, it’s time to make the seasoning for the radish salad. In a bowl, combine the julienned radish with 1 cup (180ml) of vinegar, 8 Tbsp of sugar (using brown sugar will add better color and flavor), 1 Tbsp of coarse gochugaru, 1/2 Tbsp of fine gochugaru, and 1 Tbsp of salt (flower salt helps the seasoning penetrate better).

Once all the seasonings are added, gently mix everything together without crushing the radish. Carefully toss the radish from the bottom to the top to ensure the seasoning is evenly distributed. It’s important for the seasoning to coat every strand.

You can enjoy the radish salad right after mixing, but for an even richer flavor, let it sit at room temperature for about 10-20 minutes. This resting period allows the seasoning to meld beautifully with the radish. Enjoy your delicious, refreshing radish salad!
