Introducing a special delicacy to invigorate your appetite on hot days: Deodeok Water Kimchi. This refreshing kimchi features the unique pungent flavor of deodeok combined with a cooling broth, providing a sense of utter refreshment. Made without glutinous rice or wheat flour, the broth is thickened with rice, making it a clean and healthy option.

Kimchi Ingredients

  • 300g peeled deodeok (Korean bellflower root)

Making Delicious Kimchi Broth

  • 2 Tbsp cooked rice
  • 1500mL water (approx. 6 cups)
  • 1 Tbsp coarse sea salt (cheonilyeom)
  • 2 Tbsp coarse sea salt (cheonilyeom)
  • 2 Tbsp sugar (or alternative sweetener)
  • 3 Tbsp gochugaru (Korean chili powder)
  • 80g minari (water parsley)
  • 60g carrot
  • 25g whole garlic cloves (approx. 10-15 cloves)

Cooking Instructions

Step 1

First, we’ll make the base for the kimchi broth. In a pot, combine 2 tablespoons of cooked rice and 1500mL of water. Simmer gently until the rice grains are well broken down. Even without glutinous rice or wheat flour, the softened rice grains will add a smooth texture to the broth. Once the rice is thoroughly softened, turn off the heat and let it cool completely.

Prepare the minari (water parsley) that will add a fresh aroma. Carefully trim off any wilted or damaged parts of the minari. Wash it thoroughly under running water several times. After washing, shake off excess water and cut it into bite-sized pieces that will mix well in the kimchi.

Prepare the carrot, which will add a crisp texture and beautiful color. Slice the carrot thinly and into round shapes. For a more decorative touch, you can use a cookie cutter or a knife to create pretty flower shapes.

For a pungent flavor, prepare the whole garlic cloves by trimming off the ends and slicing them thinly. This preparation will allow the garlic aroma to infuse better into the kimchi broth.

It’s time to prepare the star of this recipe: the deodeok. Take 300g of cleaned and prepared deodeok and cut it into pieces similar in size to the other ingredients. Add 1 tablespoon of coarse sea salt to the cut deodeok and let it lightly salt for about 5 minutes. The deodeok will release some moisture, softening its characteristic slightly bitter taste. Observe it during this salting process.

After salting for 5 minutes, rinse the deodeok thoroughly in cold water twice to remove the saltiness. Drain the rinsed deodeok well in a colander.

Strain the rice-water mixture that was cooked and cooled earlier. Use a sieve or cheesecloth to separate the rice grains and keep only the clear broth. This clear broth will serve as the foundation for our delicious kimchi broth.

To the strained clear kimchi broth, add 2 tablespoons of coarse sea salt and 2 tablespoons of sugar to season. The sweetness can be adjusted to your preference, and you can use alternative sweeteners instead of sugar. Taste and adjust the saltiness or sweetness as needed.

Sift 3 tablespoons of gochugaru (Korean chili powder) through a fine sieve to create a clear chili water. This method prevents the kimchi broth from becoming cloudy and maintains its beautiful color, ensuring a clean spicy taste when it ferments.

Now it’s time to combine all the ingredients. Add the prepared deodeok, sliced garlic, flower-shaped carrots, and cut minari to the finely strained kimchi broth. Mix everything gently until well combined. Then, carefully pack the ingredients into your kimchi container.

Leave the container of kimchi at room temperature for about a day to allow the flavors to meld as the ingredients ferment. Afterward, store it in the refrigerator to chill.
