On a sudden hot day when your appetite is gone, I made a refreshing and cool cucumber soup that’s simple and quick to prepare. It’s perfect for invigorating your senses!
Main Ingredients- 1 cucumber (choose a fresh, crisp one)
- 1/2 red chili pepper (for color and a hint of spice)
- 600ml cold water (ice-cold is best for a refreshing soup)
Seasoning Ingredients- 1/2 Tbsp toasted sesame seeds (for nutty flavor)
- 3 Tbsp sugar (balances the sourness and adds sweetness)
- 6 Tbsp vinegar (the key to its refreshing tang)
- 2/3 Tbsp salt (essential for seasoning)
- 1/3 Tbsp minced garlic (adds a clean flavor; reduce if you prefer less garlic)
- 1/3 Tbsp fish sauce (for umami depth; soy sauce can be used but will alter the flavor)
- 1/2 Tbsp toasted sesame seeds (for nutty flavor)

Cooking Instructions
Step 1
Wash the cucumber thoroughly, trim the ends, and slice it into thin julienne strips. Thinly slice the red chili pepper, removing the seeds if you prefer less heat, for a touch of color. Prepare the minced garlic, or mince fresh garlic finely.

In a bowl, combine the sugar, vinegar, fish sauce, and salt. Stir well with a spoon until the sugar and salt are completely dissolved. This ensures the seasonings blend smoothly into the soup base.
Step 3
Once the seasonings have mostly dissolved, pour in the cold water. Stir again to fully incorporate the seasonings into the water. Taste the broth and adjust the sweetness or sourness to your preference.
Step 4
Add all the prepared ingredients – the julienned cucumber, sliced red chili pepper, and minced garlic – to the seasoned broth. Stir everything together gently to ensure the ingredients are evenly coated with the flavorful broth. Taste again and add more salt or sugar if needed.
