  • 2 handfuls of soybean sprouts (approx. 200g)
  • 1/2 stalk of green onion
  • 1 chili pepper (e.g., Cheongyang chili)
  • 800ml of clear broth or water
  • 1 Tbsp of soup soy sauce (Guk-ganjang)
  • 1/2 Tbsp of minced garlic
  • 1/2 Tbsp of salted shrimp (Saeu-jeot), adjust to taste

Cooking Instructions

First, prepare the vegetables. Finely chop the green onion. For the chili pepper, remove the seeds and then chop it finely. Rinse the soybean sprouts thoroughly under running water. You can trim the roots and tips of the soybean sprouts if you prefer, but simply rinsing them clean is perfectly fine for a delicious soup.

Pour 800ml of broth or water into a pot and add the rinsed soybean sprouts. Two handfuls of soybean sprouts typically go well with 800ml of liquid, but feel free to add more water or broth if you prefer a more generous portion of soup. Gently stir the sprouts occasionally with a spoon to ensure they cook evenly. When cooking the soybean sprouts, you can choose to leave the lid open or closed. Leaving the lid open can help reduce any slight ‘beany’ smell from the sprouts, while closing it will cook them faster.

After simmering for about 6 minutes, the soybean sprouts will be tender-crisp. Check for doneness, then season with 1 Tbsp of soup soy sauce, 1/2 Tbsp of minced garlic, and 1/2 Tbsp of salted shrimp. Salted shrimp adds a wonderfully refreshing, clean flavor and a savory depth to the broth. Adjust the amount of salted shrimp according to your preference.
