This recipe uses leftover radish and dried pollack from holiday feasts to create a wonderfully refreshing soup. It’s perfect for cleansing your palate after indulging in rich, fatty foods. If you have a dried pollack from a memorial service, tearing it by hand and making this soup is an excellent way to enjoy it. Using rice water enhances the savory depth and reduces any fishy odor.

Soup Ingredients

  • Radish: 1 piece, 2cm thick
  • Dried pollack (prepared)
  • 1 Egg
  • 1 Green onion
  • 1 Red chili
  • 1 Tbsp Sesame oil

Seasoning and Broth

  • 2 Cups Rice water (third water from rinsing rice)
  • 1 Tbsp Soy sauce for soup (Guk-ganjang)
  • 1 Tbsp Minced garlic
  • Pinch of black pepper
  • Salt (to taste, if needed)

Cooking Instructions

First, lightly rinse the dried pollack in cold water to remove any impurities, then tear or cut it into bite-sized pieces. Slice the radish into 2cm thick pieces and then thinly julienne them. Chop the green onion diagonally for a fresh aroma, and crack the egg into a bowl, remove the chalazae, and whisk it thoroughly with a fork.

Heat a pot over medium-low heat and add 1 tablespoon of sesame oil. Add the prepared dried pollack and julienned radish, and stir-fry until lightly browned and fragrant, about 2-3 minutes. Be careful not to burn them.

Pour 2 cups of rice water into the pot with the stir-fried radish and pollack. Rice water, specifically the third rinse, makes the soup less cloudy and more savory, while also helping to eliminate any fishy smell from the pollack. Bring the soup to a boil over high heat.

Once the soup comes to a rolling boil, slowly drizzle the whisked egg in a circular motion around the edge of the pot. Wait about 10 seconds after the egg starts to set before gently stirring with chopsticks or a fork. This will create soft, fluffy ribbons of egg, similar to a thin omelet. Turn off the heat temporarily.

Add the chopped green onion and red chili. Season with a pinch of black pepper and 1 tablespoon of soup soy sauce. Taste and adjust the seasoning with salt if needed. Skim off any foam that rises to the surface during cooking for a clearer broth.
