  • 600g clams, pre-purged of sand
  • 2 Tbsp cooking wine (mirin)
  • 1 Tbsp chopped green onions
  • 1 tsp minced garlic
  • 1500ml kelp-infused water (or plain water)

Seasoning

  • 2/3 Tbsp Korean soy sauce (joseon-ganjang)

Cooking Instructions

Prepare the clams by purging them of sand beforehand. (Purging tip: Soak clams in lightly salted water in a dark place for 30-60 minutes, then scrub them clean). Also, prepare the green onions, cooking wine, minced garlic, and Korean soy sauce for the soup.

Place the 600g of cleaned clams into a pot. Add 1500ml of kelp-infused water (or plain water) and bring to a boil over high heat.

As soon as the water starts to boil, add 2 tablespoons of cooking wine. This helps to remove any fishy odor from the clams, resulting in a cleaner taste.

While boiling, skim off any foam or impurities that rise to the surface using a spoon. This step is crucial for achieving a clear and pristine broth.

For an even clearer broth, you can strain the soup through a fine-mesh sieve. (When pouring the broth back into the pot, do so slowly at the end to avoid disturbing any sediment or clam shells that might have settled at the bottom.)

Pour the strained broth back into the pot and bring it to a simmer over medium-low heat. This process further enhances the refreshing and clean flavor of the soup.

Add the purged clams back into the simmering broth. Be careful not to overcook the clams, as they can become tough if boiled for too long.

Stir in 2/3 tablespoon of Korean soy sauce for a savory depth. Taste the broth and adjust the seasoning with more Korean soy sauce or salt if needed. A pinch of black pepper can be added at this stage for an extra aromatic touch, according to your preference.
