  • 1 bag fresh purslane (approx. 200-300g)
  • 1 Tbsp chopped green onion

Seasoning

  • 1 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp doenjang (Korean soybean paste)
  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp maesilcheong (plum extract, for sweetness and depth)
  • 0.5 Tbsp sugar (adjust sweetness)
  • 1 Tbsp sesame oil (for nutty aroma)
  • A pinch of sesame seeds

First, prepare the purslane carefully. Remove any wilted or yellow leaves, and trim off the tough ends of the stems. Rinse the purslane gently 2-3 times under running water to remove any dirt or debris.

Bring a pot of water to a boil and add a pinch of salt. Once boiling, add the prepared purslane and blanch for just 1 minute. Be careful not to overcook, as it can become mushy. Immediately rinse the blanched purslane in cold water to stop the cooking process and cool it down. Gently squeeze out excess water – avoid pressing too hard. Finally, cut the purslane into manageable pieces (2-3 portions).

Now, let’s make the delicious seasoning! In a bowl, combine 1 Tbsp gochujang, 0.5 Tbsp doenjang, 1 Tbsp gochugaru, 1 Tbsp maesilcheong, and 0.5 Tbsp sugar. Mix them well until evenly combined.

Add the prepared purslane and 1 Tbsp of chopped green onion to the bowl with the seasoning. Gently toss and mix the ingredients using your fingertips, being careful not to mash the purslane. Ensure the seasoning is evenly distributed throughout the greens.

Finally, sprinkle some sesame seeds on top for a nutty finish. If you love the aroma of sesame oil, you can drizzle an extra bit of sesame oil just before serving for an enhanced flavor profile.
