Donut Batter

  • 1 large egg
  • 50g granulated sugar
  • 2g vanilla extract
  • 0.5g salt
  • 20g milk
  • 30g strawberry puree
  • 70g cake flour
  • 20g almond flour
  • 2g baking powder
  • 30g melted unsalted butter (40-50°C / 104-122°F)
  • 10g vegetable oil

Strawberry Icing/Glaze

  • 100g powdered sugar
  • 15g strawberry puree
  • 10g milk (add more as needed)

Homemade Strawberry Puree (See Recipe @7002998)

  • 150g frozen strawberries
  • 30g granulated sugar
  • 6g lemon juice

Cooking Instructions

Step 1

In a mixing bowl, whisk together the egg, granulated sugar, vanilla extract, and salt until the sugar is mostly dissolved. Then, stir in the milk and strawberry puree until well combined.

In a separate bowl, sift together the cake flour, almond flour, and baking powder. Sifting ensures no lumps and helps create a lighter texture in your donuts.

Add the sifted dry ingredients to the wet ingredients. Gently mix with a spatula until just combined and no dry streaks remain. Be careful not to overmix, as this can make the donuts tough.

Pour in the vegetable oil and the melted unsalted butter (ensure it’s cooled slightly to 40-50°C or 104-122°F, to avoid cooking the eggs). Mix gently until the batter is smooth and homogenous.

Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour. This chilling step allows the gluten to relax and develops the flavors, resulting in a better texture.

Grease your donut pan thoroughly with butter. Spoon the chilled batter into a piping bag and pipe it into each donut mold, filling them about 70% full. The batter will rise during baking.

Bake in a preheated oven at 175°C (350°F) for 15 to 18 minutes. Baking times may vary depending on your oven. Check for doneness by inserting a toothpick into the center; it should come out clean.

Once baked, carefully remove the donuts from the pan and let them cool completely on a wire rack. Ensure they are fully cooled before glazing to prevent the icing from melting off.

While the donuts cool, prepare the icing. In a clean bowl, sift the powdered sugar. Add the strawberry puree and mix until smooth. You should have a thick paste at this point.

Adjust the icing consistency by gradually adding milk, a teaspoon at a time, until you reach your desired drizzling or spreading consistency. Mix well after each addition.

Once the donuts are completely cool, dip the tops into the strawberry icing, or spread it on with a spatula. Place them back on the wire rack to allow the excess icing to drip off and set.
