Quick Tuna Kimchi Porridge: The Ultimate Hangover Cure

Don’t throw away those leftover bits of kimchi from your kimchi stew or braised kimchi! You can whip up a foolproof porridge using basic ingredients you likely already have. Make it spicy with chili peppers for a fantastic hangover cure, or add sesame seeds for a nutty flavor that kids will love. Rekindle your appetite with this delicious Tuna Kimchi Porridge!

Main Ingredients

  • 4 ladles of kimchi stew broth or braised kimchi liquid
  • 1/2 cup finely chopped kimchi from kimchi stew or braised kimchi
  • 1 small can of tuna, drained
  • 1 packet of instant rice
  • 1 tablespoon sesame oil
  • 1/2 handful of dried seaweed or seaweed flakes (for garnish)

Optional Ingredients (For Extra Flavor!)

  • 1/2 Cheongyang chili pepper, minced (if you like it spicy)
  • 1/2 handful green onions, chopped

Cooking Instructions

Step 1

1. (Preparation) First, prepare a delicious kimchi stew or braised kimchi. This recipe is all about using the broth and leftover kimchi!

2. Heat 1 tablespoon of sesame oil in a ttukbaegi (earthenware pot) or a small pot. Add the chopped kimchi from your kimchi stew or braised kimchi and finely chop it further with scissors or a knife into bite-sized pieces.

3. Sauté the kimchi for a minute, then add the drained tuna. Stir-fry together over low heat for 1-2 minutes until the tuna’s raw smell dissipates.

4. If using, add the minced Cheongyang chili pepper or chopped green onions. Continue to stir-fry over low heat for about 1 minute until all ingredients are well combined and have a similar color.

5. Add the packet of instant rice to the sautéed ingredients. Break up the rice with a spatula and mix it in.

6. Pour in 4-5 ladles of the kimchi stew or braised kimchi broth. Bring to a simmer over medium-low heat.

7. Once the porridge starts to boil, add 1-2 more ladles of water and continue to simmer for at least 5 minutes, or until it reaches your desired consistency. (Adding water periodically prevents sticking to the bottom as the liquid reduces.) If you want it spicier, you can add more minced chili pepper towards the end of cooking.

8. When the porridge has reached your desired thickness, turn off the heat. Garnish with about 1/2 handful of dried seaweed or seaweed flakes. You can crumble dried seaweed sheets or use seasoned seaweed strips (gimjaban). Gently mix it in.

9. Serve hot and enjoy! You’ll be amazed at how this simple dish can bring back your lost appetite.
