Don’t have rice cakes? No problem! This recipe magically creates a chewy, tteokbokki-like flavor using only a single pack of ramen. With a short cooking time and simple steps, it’s perfect for those urgent cravings (especially before bed!) when you need a quick snack. This ramen stir-fry tastes even better than store-bought versions and is packed with a delightful sweet and spicy flavor!

Ingredients

  • 1 pack of ramen (choose your favorite type)
  • 300ml water (approx. 1.5 cups)
  • 1 Tbsp sugar (adjust to taste)
  • 1 Tbsp gochujang (Korean chili paste, adjust to spice preference)
  • 1/2 stalk green onion, thinly sliced
  • A pinch of sesame seeds (optional, for garnish)

Cooking Instructions

Step 1

Pour 300ml of water into a pot. This is about 1.5 standard paper cups. Heat the water over medium heat until it begins to boil.

Add all of the dried vegetable flakes (soup base garnish) from the ramen packet to the water. This enhances the broth’s flavor. Use only half of the powder soup base. Adding it all at once might make it too salty or intense, so it’s best to taste and add more later if needed.

Stir in 1 tablespoon of sugar and 1 tablespoon of gochujang. Whisk well with a spoon until there are no lumps. This mixture will form the delicious sweet and spicy sauce characteristic of rabokki.

Once the water is at a rolling boil, add the ramen noodles. Carefully place them in the pot to prevent them from breaking.

Gently toss the noodles back and forth to separate them and ensure they are well coated with the sauce. They will start to loosen up as they cook.

When the noodles are partially cooked and have loosened up, add the thinly sliced half stalk of green onion. For convenience and less cleanup, you can snip the green onions directly into the pot with scissors! ^^

Continue to simmer, stirring occasionally, until the sauce reaches your desired thickness. A slightly thickened, saucy consistency is key for rabokki. If it becomes too salty, you can add a little more water.

Transfer the delicious, simmered rabokki to a serving bowl. Finish with a sprinkle of sesame seeds for a nutty aroma. Enjoy! The sesame seeds are optional but add a nice touch.
