Main Ingredients

  • 600g Pork Shoulder (cut into bite-sized pieces)
  • 1 Onion (thinly sliced)
  • Approx. 1/6 head of Cabbage (thinly sliced)
  • 3 Tbsp Cooking Oil

Seasoning Ingredients

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Gochujang (Korean chili paste), leveled
  • A pinch of Ginger Juice or Ginger Powder
  • A pinch of Black Pepper
  • 1 Tbsp Minced Garlic
  • Approx. 1/2 stalk of Green Onion (chopped)
  • Sesame Oil (for drizzling)
  • Sesame Seeds (for garnish)
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Sugar

Cooking Instructions

Step 1

Begin by heating 3 tablespoons of cooking oil in a pan over medium heat. Add the 600g of pork shoulder and stir-fry until it’s nicely browned, sprinkling with a pinch of black pepper to enhance flavor and reduce any gamey smell. Make sure to stir frequently to prevent burning.

Once the pork is about 80% cooked, it’s time to add the seasoning. Add 2 tablespoons of sugar, 3 leveled tablespoons of gochujang, 2 tablespoons of gochugaru, a pinch of ginger juice (or powder), a pinch of black pepper, and 1 tablespoon of soy sauce to the pan. Stir well to distribute the seasoning evenly over the pork and continue cooking. Be mindful of the heat to prevent the sauce from burning.

When the pork is well-coated and cooked with the sauce, add the thinly sliced onion and cabbage. Also, add the chopped green onion. Stir-fry quickly over high heat to wilt the vegetables slightly without making them too soggy – this is key to retaining their texture. Finally, drizzle a swirl of sesame oil around the edges of the pan for added aroma.
