Make a delicious cucumber salad the country-style way in just 5 minutes. It’s quick, easy, and incredibly tasty, perfect for a light and refreshing meal.
Ingredients- 1.5 medium cucumbers
- 0.5 Tbsp minced garlic
- 1 Tbsp soy sauce (Korean soup soy sauce/Guk-ganjang)
- 0.5 Tbsp red pepper flakes (Gochugaru)
- 0.5 Tbsp crushed sesame seeds
- 0.5 Tbsp whole sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Wash the cucumbers thoroughly under running water and pat them dry. Slice them into bite-sized pieces, about 0.5 cm thick half-moons or diagonally. Slicing them not too thin will help maintain their crisp texture.
Step 2
Add the minced garlic and red pepper flakes to the sliced cucumbers. Gently toss with your hands to coat the cucumbers evenly with the seasoning. Be careful not to overmix, as this can make the cucumbers mushy.
Step 3
Pour in the soy sauce (Korean soup soy sauce/Guk-ganjang) and gently mix again to ensure the cucumbers are seasoned evenly. Guk-ganjang has a deeper, more savory flavor profile than regular soy sauce and enhances the overall taste.
Step 4
Finally, add the crushed sesame seeds, whole sesame seeds, and aromatic sesame oil. Toss lightly one last time. Your delicious soy sauce cucumber salad is ready in a flash! You can enjoy it immediately, or chill it in the refrigerator for an even more refreshing taste.
