Main Ingredients
  • Shirataki noodles 200g
  • Commercial soy milk soup base 200ml
  • Chicken breast 1 piece (approx. 135g)
  • 1 Hard-boiled egg
  • A sprinkle of toasted sesame seeds

Optional Toppings
  • A few ice cubes
  • Thinly sliced cucumber
  • Salt to taste

For Cooking Chicken Breast
  • 1 Tbsp Mirin (rice wine)
  • 2 cups (500ml) Water

For Boiling Eggs
  • 3 cups (750ml) Water
  • 1 tsp Salt

Cooking Instructions

Step 1

Boil the Eggs: In a pot, combine 3 cups (750ml) of water and 1 tsp of salt. Bring to a boil, then carefully add the eggs. Reduce heat to medium and simmer for about 12 minutes. Immediately rinsing the eggs under cold water after cooking helps make them easier to peel.

Step 2

Cook the Chicken Breast: In a separate pot, add 2 cups (500ml) of water and 1 Tbsp of mirin. Add the chicken breast and bring to a simmer. As it cooks, white foam will rise to the surface. Skim this foam off with a spoon to ensure a clean flavor and appearance. Continue to simmer for about 10-15 minutes, or until the chicken breast is fully cooked through.

Step 3

Prepare the Shirataki Noodles: Place the shirataki noodles in a colander and rinse them under cool running water once or twice. Gently squeeze out excess water by hand; this prevents the broth from becoming cloudy.

Step 4

Shred the Chicken Breast: Immediately after cooking, transfer the chicken breast to cold water to cool it down. Once cooled enough to handle, use your hands to shred it into bite-sized pieces. Wearing cooking gloves is recommended as the chicken might still be warm, ensuring safety and ease.

Step 5

Assemble the Khongguksu: In a serving bowl, place the drained shirataki noodles. Pour the commercial soy milk soup base over the noodles. Arrange the shredded chicken breast, thinly sliced cucumber, and the halved hard-boiled egg on top as desired. Finish with a sprinkle of toasted sesame seeds for added aroma and flavor.
