Instead of the usual anchovy broth, this time we’re making Tteok Mandu Guk (rice cake and dumpling soup) with a rich and savory beef bone broth! No need to go through the hassle of simmering beef bones for hours. Using beef bone broth powder, you can easily achieve a deep, hearty flavor just like homemade Gomtang (Korean beef bone soup), but in a fraction of the time. This recipe is incredibly simple, requiring only rice cake, dumplings, and green onions – no extra seasoning needed! Perfect for busy days when you want a satisfying and delicious meal in a flash.

  • 600ml water

In a pot, combine 600ml of water with 1 Tbsp of beef bone broth powder. This powder will quickly create a deep and savory broth, similar to one simmered for hours. Stir well to dissolve any clumps.

Once the broth begins to boil, add 100g of Tteokguk Tteok (rice cakes) and 12 dumplings. For softer rice cakes, soak them in cold water briefly before adding. Feel free to mix dumpling types, like Shrimp & Squid and Chili dumplings, for added flavor. You won’t need to add any extra seasoning, as the beef bone broth powder is already well-seasoned.

As the rice cakes and dumplings start to cook, add 1 Tbsp of chopped green onions and let it simmer for another moment. The fresh aroma of the green onions will enhance the overall flavor of the broth.

When the soup comes to a rolling boil again, add about 1 tsp of black pepper. This is the step to add more dumplings if desired – for example, 10 Shrimp & Squid dumplings and 2 Chili dumplings, or any combination you prefer. Let everything simmer together to meld the flavors.

Check if the rice cakes are tender and the dumplings are fully cooked. If you soaked the rice cakes, they’ll typically cook in about 1-2 minutes. If not soaked, they might take 3-4 minutes. Bring it to a final, vigorous boil to ensure everything is perfectly cooked.

Ladle the rich beef bone broth Tteok Mandu Guk into serving bowls. Garnish with the remaining chopped green onions. Enjoy this quick yet incredibly flavorful soup!
