Main Ingredients
  • Noodle for Kalguksu, 2 servings
  • Dried anchovies for broth, 5 pieces
  • Onion, 1/2
  • Garlic cloves, 3
  • Carrot, 1 handful
  • Scallion, 1 handful

Seasoning
  • Soup soy sauce, 1 Tbsp
  • Salt, 1/2 Tbsp (adjust to taste)
  • Black pepper, 1/3 tsp

Cooking Instructions

Step 1

First, let’s create a flavorful broth for the noodle soup. In a pot, add 2 servings of water (a little more than you’d use for ramen). Add 5 dried anchovies, 1/2 an onion (whole), and 1 potato thinly sliced. Bring to a boil over high heat, then reduce to medium-low and simmer for about 5 minutes to extract the flavors from the vegetables.

Step 2

Prepare the other ingredients for the Kalguksu. Thoroughly wash the 600g of purged clams under running water. Finely chop the scallions and thinly julienne the carrot. Crush or mince the 3 garlic cloves. Having these prepped will significantly speed up your cooking time.

Step 3

Remove the anchovies, onion, and potato from the broth. Add the washed clams and the 2 servings of Kalguksu noodles to the clear broth. Cook over medium heat for about 7 minutes, or until the noodles are tender and the clams have opened. The opening of the clams is your sign they are cooked.

Step 4

Finally, season the soup to taste. Stir in 1 tablespoon of soup soy sauce for depth of flavor. Add salt to adjust the saltiness as needed. Sprinkle in 1/3 teaspoon of black pepper for aroma. Ladle the hot, freshly made Kalguksu into bowls and enjoy your delicious homemade meal!
