- 1 medium zucchini
- 1/2 medium onion
- 1 package (small) enoki mushrooms
Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Slice it into thick, half-moon shapes or rounds, about 0.5 cm thick. Slicing them slightly thicker prevents them from becoming mushy during cooking and ensures a pleasant texture.
Step 2
Thinly slice the onion. Prepare the enoki mushrooms by trimming the root end or gently separating them with your fingers. Have the minced garlic ready.
Step 3
Heat about 2-3 tablespoons of cooking oil in a pan over medium heat. Add the sliced zucchini and stir-fry until it begins to turn slightly golden brown. Once the zucchini starts releasing some moisture, add the sliced onion and continue to stir-fry together.
Step 4
When the zucchini and onions become translucent, add the enoki mushrooms and minced garlic. Stir-fry for another 1-2 minutes until the enoki mushrooms are wilted.
