- 1 Tbsp Red Pepper Flakes (Gochugaru)
- 1 tsp Minced Garlic
- 1.5 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 tsp Sugar
- A pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare your vegetables and tofu. Finely chop the green onion and thinly slice or mince the onion. Cut the tofu into bite-sized cubes. Try to keep them a consistent size so they cook evenly; avoid cutting them too small as they might break apart during cooking.
Step 2
In a pot, place the chopped green onions at the bottom. Next, add the entire can of tuna, including the oil. The tuna oil adds a wonderful depth of flavor to the stew, so don’t discard it! Then, add the red pepper flakes for a touch of heat and the minced garlic for aroma and flavor.
Step 3
Place the pot over medium-high heat and sauté for about 30-40 seconds, stirring to combine the ingredients. You’ll smell the delicious aroma as the flavors meld. Once fragrant, add the sliced onions and cook for another minute until they become translucent. Be careful not to burn the ingredients.
Step 4
Once the onions have softened slightly, pour in enough water or anchovy-kelp broth to generously cover the ingredients (about 1.5 to 2 cups, adjust to your preference for soupiness). Bring it to a boil over high heat. Once boiling, carefully add the cubed tofu. Season with soy sauce for soup and add the sugar to balance the spiciness. Finish with a pinch of black pepper. (If you prefer less spice, you can reduce or omit the red pepper flakes and black pepper.)
Step 5
After adding the tofu, reduce the heat to medium-low and simmer for about 5 minutes. This allows the tofu to absorb the flavors of the broth and become tender. Gently stir occasionally to prevent the tofu from breaking apart and to ensure everything is well combined. Your delicious Tuna and Tofu Stew is now ready to be served!
