Super Simple Seasoned Spinach
Let’s cook fresh, seasonal spinach in a flash! This recipe brings out the best flavor with minimal effort.
Main Ingredients- 1 bunch fresh spinach (approx. 200-300g)
- 1L water
- 1 Tbsp coarse salt (for blanching)
Cooking Instructions
Step 1
Thoroughly wash the fresh spinach under running water to remove any dirt. Trim off any wilted leaves or dirty root parts. If the spinach leaves are very large, you can cut them into 2-3 bite-sized pieces.
Step 2
Bring 1L of water to a rolling boil in a pot over high heat, adding 1 Tbsp of coarse salt. Once boiling, add the spinach and blanch quickly for about 30 seconds to 1 minute, just until it wilts slightly. Be careful not to overcook, as it can become mushy.
Step 3
Immediately transfer the blanched spinach to cold water to cool it down. Gently squeeze out excess water with your hands. Avoid squeezing too tightly, as this can impart a raw vegetal taste; aim for a gentle squeeze.
Step 4
Place the squeezed spinach in a mixing bowl. Add 1 tsp of minced garlic, 1 Tbsp of anchovy sauce (or Korean soup soy sauce), and 1 tsp of salt. Adjust the saltiness to your preference. Anchovy sauce adds a wonderful umami depth.
