Main Ingredients- Leftover boneless chicken, about 1/2 chicken (chopped into bite-sized pieces)
- 3 servings of cooked rice (preferably warm)
Seasoning- 2 Tbsp Oyster sauce
- 2 Tbsp Black pepper (adjust to your preference)
- 1 Tbsp Soy sauce
- 2 Tbsp Oyster sauce
- 2 Tbsp Black pepper (adjust to your preference)
- 1 Tbsp Soy sauce
Cooking Instructions
Step 1
Heat 2-3 tablespoons of cooking oil in a wide pan or wok over medium heat until shimmering. A well-heated pan prevents sticking and helps create a delicious sear on the ingredients.
Step 2
Add the chopped leftover chicken pieces to the hot pan and stir-fry for about 2-3 minutes until they are lightly browned and fragrant. This step enhances the chicken’s flavor and texture, making it more enjoyable in the fried rice. The rendered chicken fat will also add richness.
Step 3
Add the warm cooked rice and all the seasoning ingredients (2 Tbsp oyster sauce, 2 Tbsp black pepper, 1 Tbsp soy sauce) to the pan with the chicken. Adding the seasoning all at once ensures it coats everything evenly.
Step 4
Increase the heat to high and stir-fry vigorously for about 3-4 minutes, mixing everything together well. Continue to stir and toss the rice and chicken to ensure the grains are separate and fluffy, and the sauce is evenly distributed. Keep stirring to prevent sticking and achieve a perfectly cooked fried rice.
