  • Category : Noodles & Dumplings
  • Ingredient Category : Flour / Wheat
  • Occasion : Quick & Easy
  • Cooking : Mixed (Bibim-style)
  • Servings : 1 serving
  • Cooking Time : Within 15 minutes
  • Difficulty : Beginner

Main Ingredients

  • 1 serving medium noodles (jungmyeon)
  • A handful of chives
  • 1/2 Korean melon (chamoe)
  • 1 Tbsp store-bought cold noodle sauce (naengmyeon yangnyeomjang)
  • Sesame oil, to taste
  • 1/2 cucumber
  • A little carrot (for color)

Cooking Instructions

Step 1

First, bring a generous amount of water to a rolling boil in a pot. This is for cooking the noodles.

Step 1

Step 2

Once the water is boiling, add the medium noodles and gently stir to prevent them from sticking together as they cook.

Step 2

Step 3

When the noodles are cooked to your liking, turn off the heat. Immediately rinse the noodles under cold running water. This process removes excess starch, resulting in a chewier, springier texture.

Step 3

Step 4

Drain the rinsed noodles thoroughly in a colander. Ensure all excess water is removed, as this can dilute the seasoning sauce.

Step 4

Step 5

Wash the chives and pat them dry. Trim them to about 3 cm (1.2 inches) in length.

Step 5

Step 6

For the cucumber, trim off the ends. You can peel it using a peeler or simply scrape off thin strips lengthwise with a vegetable peeler to create grooves. This step is optional but adds a nice textural contrast.

Step 6

Step 7

Julienne the cucumber into thin strips, approximately 3 cm (1.2 inches) long. Aim for thin slices so they blend well with the noodles.

Step 7

Step 8

Wash the Korean melon. Cut it in half lengthwise, then use a spoon to scoop out and discard the seeds from the center.

Step 8

Step 9

Keeping the skin on, julienne the Korean melon into thin strips, about 3 cm (1.2 inches) long. The melon’s subtle sweetness and aroma will add a unique touch to the dish.

Step 9

Step 10

Peel the carrot and julienne it into thin strips, about 3 cm (1.2 inches) long. The carrot adds a vibrant color, making the Bibim Guksu visually appealing.

Step 10

Step 11

Arrange the drained noodles attractively in a serving bowl.

Step 11

Step 12

Artfully pile the julienned vegetables (cucumber, Korean melon, carrot, and chives) on top of the noodles. Arranging them like a colorful garnish makes the dish even more inviting.

Step 12

Step 13

Drizzle 1 tablespoon of the store-bought cold noodle sauce over the arranged vegetables and noodles.

Step 13

Step 14

Finally, add a swirl of sesame oil to your preference. Mix everything together thoroughly and enjoy! For an extra touch, consider adding a fried egg or some shredded seaweed.

Step 14

Step 15

Feel free to adjust the amount of sauce to your taste. If you prefer more heat, add a little gochujang (Korean chili paste) or red pepper flakes. Savor the delightful combination of fresh vegetables and springy noodles!
