Quick & Easy Air Fryer Stir-Fried Udon

Today, I opened my fridge and spotted ingredients perfect for making stir-fried udon! What’s great is that you don’t need to stir-fry on the stove; you can make a fantastic stir-fried udon using just your air fryer. I adapted a Japchae (glass noodle stir-fry) recipe from the book ‘The Ultimate Air Fryer Recipes’ to create this simple yet delicious stir-fried udon. Let’s get started on this satisfying meal, perfect for one!
Main Ingredients
- 1 pack fresh udon noodles (if using acid-treated noodles, soak in cold water for 10 mins to remove sourness)
- 5 slices thick-cut bacon
- 50g cabbage (cut into bite-sized pieces)
- 1/2 bell pepper (seeds removed, cut into bite-sized pieces)
- 1/2 onion (thinly sliced)

1. Prepare the star: Fresh udon noodles! If your fresh udon noodles taste a bit sour from the acid treatment, soak them in clean water for about 10 minutes to neutralize the flavor. Gently loosen any clumps and drain thoroughly in a colander.

2. Chop the bacon and vegetables into easy-to-eat pieces. Lightly rinse the bacon under cold water, then cut it into 3-4 cm lengths. Slice the onion thinly, and cut the cabbage and bell pepper (after removing seeds) into bite-sized pieces.

3. Create the golden ratio: Make the stir-fried udon sauce! In a bowl, combine 2 Tbsp oyster sauce, 3 Tbsp chili oil, and 1 Tbsp chili powder. Mix well to create the sauce. (Tip: If you don’t have chili oil, you can achieve a similar flavor by mixing 2 Tbsp of olive oil with 1/2 Tbsp of finely minced Cheongyang chili peppers.)

4. Combine and coat all ingredients with the sauce. Place the prepared udon noodles, bacon, and chopped vegetables into a large bowl. Pour the sauce over them and gently toss everything together until well-coated.

5. Bake easily in the air fryer! Transfer the coated ingredients into an air fryer-safe gratin dish or a wide pan, arranging them nicely. Place in a preheated air fryer at 180°C (350°F) and cook for 8 minutes. Giving it a toss halfway through will ensure even cooking.
