  • 5 Tbsp soy sauce (50ml, regular or brewed)
  • 1.5 Tbsp sesame oil
  • 2 Tbsp plum syrup (20ml)
  • 1 Tbsp corn syrup (or rice syrup, allulose, or 1 tsp sugar if unavailable)
  • 2 Tbsp red pepper flakes (20g)
  • 5 Tbsp water (50ml)
  • 1 Tbsp minced garlic
  • Sesame seeds

Cooking Instructions

Step 1

First, prepare 3 bundles of perilla leaves, which is about 30 leaves. These are budget-friendly and can usually be found for around 1,000 won. Wash the perilla leaves thoroughly under running water, making sure to clean between the leaves. Gently rinse them to remove any dirt or debris, then drain them well.

Step 2

Now, let’s make the heart of our delicious perilla leaf kimchi: the seasoning sauce. In a medium bowl, combine 5 tablespoons of soy sauce, 1.5 tablespoons of sesame oil, 2 tablespoons of plum syrup, 1 tablespoon of corn syrup (you can substitute with rice syrup, allulose, or 1 teaspoon of sugar if you don’t have corn syrup), 2 tablespoons of red pepper flakes, 5 tablespoons of water, and 1 tablespoon of minced garlic. Mix everything together well. Finally, add a sprinkle of sesame seeds for extra flavor and aroma.

Step 3

Lay out the perilla leaves one by one. Place them with the prettier side facing up. Slightly overlap the leaves in a staggered pattern. This arrangement allows the seasoning to seep into every crevice, ensuring maximum flavor.

Pour the prepared seasoning sauce evenly over the perilla leaves. Drizzle it along the leaf veins, allowing the sauce to naturally spread. Make sure each leaf is coated with the seasoning.

Lastly, if there’s any excess seasoning pooled on top, use a spoon to spread it evenly onto other parts of the perilla leaves.
