Cabbage prices are high, Napa cabbage is out of season and lacks moisture, and green onions are also quite expensive. While searching for kimchi ingredients, I discovered this ‘budget-friendly’ scallion option! Make this flavorful and lightning-fast scallion kimchi. It’s perfect for busy days and a fantastic banchan (side dish) that comes together in just 3 minutes.
Main Ingredients- 1 bunch fresh scallions (approx. 170g), cut into 4-6 sections
Flavorful Scallion Salad Dressing- 1 Tbsp anchovy sauce (10ml, can substitute with fish sauce)
- 1 Tbsp soy sauce (10ml, regular or brewed)
- 1 tsp sugar
- Sesame seeds (toasted)
- 1 Tbsp plum extract (10ml)
- 3 Tbsp red pepper flakes (30g)
- 1 Tbsp anchovy sauce (10ml, can substitute with fish sauce)
- 1 Tbsp soy sauce (10ml, regular or brewed)
- 1 tsp sugar
- Sesame seeds (toasted)
- 1 Tbsp plum extract (10ml)
- 3 Tbsp red pepper flakes (30g)
Cooking Instructions
Step 1
First, prepare one bunch of fresh scallions (about 170g). Cut them into manageable 4-6 sections. Cutting them to a suitable length makes it easier for the dressing to coat evenly and for eating.

Washing them thoroughly is key! Rinse the scallions under running water twice, being careful to clean them meticulously. After rinsing, place them in a colander to drain excess water. Properly draining the water prevents the dressing from becoming watery and ensures it adheres well to the scallions.
