I’ve prepared a simple recipe using convenience store ingredients and tips for making a delicious Tteokguk without meat, perfect for solo living. Main Ingredients

  • 1 cup Tteokguk rice cakes (tteok)
  • 1 cup frozen dumplings (mandu)
  • 1 packet store-bought beef bone broth (Sago-yuksu)
  • 1 packet Sarigomtangmyeon soup mix (can be used as a substitute if beef bone broth is unavailable)

Seasoning

  • 1/3 Tbsp salt (adjust to taste)
  • A pinch of black pepper

Garnishes

  • Thinly sliced egg garnish (jidan)
  • Sliced mushrooms (optional)

Cooking Instructions

Step 1

First, prepare the dumplings. Microwave the frozen dumplings for about 30 seconds to soften the filling. Then, heat a lightly oiled pot over medium heat and stir-fry the dumplings until their surface is lightly golden. This step enhances their flavor.

Pour the store-bought beef bone broth into the pot. If you don’t have beef bone broth, you can use 1 packet of Sarigomtangmyeon soup mix dissolved in water for a similar flavor profile. Season the broth with 1/3 Tbsp of salt and a pinch of black pepper. Taste and add more salt if needed.

Now it’s time to add the rice cakes. Tteokguk rice cakes are ideal, but you can also use regular tteokbokki rice cakes or even the rice cakes from a convenience store cup tteokbokki. Add a generous amount of your chosen rice cakes to the pot.

When the rice cakes are becoming tender and cooked, add the prepared dumplings to the pot and let them simmer together. This will allow the dumplings to absorb the broth’s flavor.

Once the rice cakes and dumplings are fully cooked, turn off the heat and ladle the Tteokguk into serving bowls. Arrange the garnishes attractively on top. You can add thinly sliced egg garnish, sautéed mushrooms, or even crumbled seaweed, according to your preference. (Note: The mention of meat garnish in the original broth is optional).
