Ingredients (Serves 60)- 2kg Pickled Radish (Mu Jangajji), cut into bite-sized pieces
- 100g Minced Garlic
- 100g Minced Green Onion (Scallions)
- 50ml Sesame Oil
- 50g Sesame Seeds
Cooking Instructions
Step 1
First, prepare your pickled radishes. For about 60 servings, you’ll need 2kg. Cut the pickled radishes into easy-to-eat, bite-sized pieces, approximately 1.5 to 2 cm in width. This size allows the seasoning to penetrate evenly, making the dish more flavorful. Once cut, place the radish pieces in a colander and rinse them gently under cold running water. This step helps to remove any excess saltiness and the slightly pungent flavor often associated with pickled radishes, resulting in a cleaner, more refreshing taste.

After rinsing and draining the pickled radishes, transfer them to a large mixing bowl. Now, it’s time to add all the seasonings. First, add 100g of finely minced garlic and 100g of finely chopped green onions. The pungent garlic and aromatic green onions will significantly enhance the radish’s flavor profile. Next, pour in 50ml of sesame oil for a rich, nutty aroma and add 50g of toasted sesame seeds for texture and nutty flavor. Once all the ingredients are in the bowl, gently mix everything together using your hands or a spatula, being careful not to mash the radishes. Ensure the seasonings are evenly distributed throughout the pickled radish pieces.

Finally, your refreshing and delicious pickled radish salad is complete! You can plate it immediately. For an extra touch, sprinkle a few more sesame seeds on top if desired. While this salad is delicious right away, allowing it to chill in the refrigerator for a short while will allow the flavors to meld further, creating an even more exquisite taste.
