Hello everyone! As the weekend draws to a close, it’s time for a simple yet satisfying lunch. Today, I’ve made ‘Kimchi Cheese Rice’ which is incredibly easy and delicious!
Main Ingredients
- 60g Well-fermented Napa Cabbage Kimchi (chopped)
- 30g Onion (finely chopped)
- 10g Carrot (finely chopped)
- 10g Green Onion (chopped)
- 20g Canned Corn (drained)
- 80g Mozzarella Cheese
- 30g Sliced Ham (chopped)

- 10g Dried Seaweed Flakes (Gim)
- 2g Toasted Sesame Seeds
- 10g Oyster Sauce (approx. 1/2 Tbsp)
- 15g Butter (approx. 1 Tbsp)

Cooking Instructions
Step 1
First, let’s prepare the ingredients that will make our Kimchi Cheese Rice delicious. Chop the well-fermented Napa cabbage kimchi into bite-sized pieces. Finely chop the onion and carrot. Chop the green onion for added aroma, and chop the sliced ham into small pieces. Make sure to drain the canned corn well.
Step 2
Now, let’s start cooking! Melt the butter (15g) in a pot or pan. Once melted, add the chopped kimchi and stir-fry until the sourness mellows and the flavor deepens. When the kimchi is nicely sautéed, add the chopped onion, carrot, green onion, and sliced ham. Stir-fry everything together. A pinch of black pepper at this stage will enhance the taste.
Step 3
Add a bowl of cooked rice (about 200g) over the sautéed ingredients and drizzle with oyster sauce (10g). Mix the rice with the ingredients until well combined. Then, on high heat, let it cook until it makes a sizzling sound and forms a crispy bottom layer (nurungji). The crunchy, toasted rice is a key element!
Step 4
Final step! Generously sprinkle the mozzarella cheese (80g) over the rice. Place it in the microwave and cook for about 2 minutes, or until the cheese is melted and bubbly. Once the cheese is beautifully melted, garnish the Kimchi Cheese Rice with dried seaweed flakes and toasted sesame seeds. This adds a wonderful nutty aroma and flavor.
