Main Ingredients

  • Assorted Korean savory pancakes (e.g., 2 shrimp jeon, 2 donggeurangttaeng, 1 perilla leaf jeon, 1 pollack fish fillet jeon)
  • 1 Korean green chili pepper
  • 1/2 onion

Cooking Instructions

Step 1

Cut the assorted jeon into bite-sized pieces that suit each type. For shrimp jeon or donggeurangttaeng, cut into 2-3 pieces. For perilla leaf or pollack fish fillet jeon, slice into about 1-1.5 cm thick pieces so they blend well with the broth. Finely chop the green chili pepper for a spicy kick, and thinly slice the onion. Prepping the ingredients like this will make cooking much smoother.

Place all the cut assorted jeon, green chili pepper, and onion into a pot. Now, pour in 2 cups of rice water, which will form the base of the stew. Rice water adds a deep, savory flavor to stews, so be sure to use it! If you don’t have rice water, plain water is fine, but rice water will significantly enhance the flavor.

It’s time to add the seasonings to the pot with the jeon and vegetables. Add 1 tablespoon of red chili flakes for a vibrant color and spicy taste, and 1 tablespoon of minced garlic to boost the umami. Add the chopped green chili pepper and onion as well, and bring to a boil over high heat. Let it simmer thoroughly to allow the flavors from the ingredients and seasonings to meld together.

Finally, it’s time to adjust the seasoning of the stew. Add 1/2 tablespoon of anchovy sauce for a deep savory taste, and use salt to adjust if needed. You can use soy sauce instead of anchovy sauce, but anchovy sauce provides a cleaner umami. Once all ingredients are cooked and the broth is flavorful, enjoy a hearty meal with a warm bowl of rice!
