An incredibly simple stir-fried enoki mushroom dish, perfect for your youngest picky eater! It’s unbelievably easy yet delicious. If you reduce the amount of oil, it pairs wonderfully with diet-friendly chicken breast, offering a delightful texture-rich meal!
Main Ingredients
- 4 packs Enoki mushrooms
- 1/3 stalk Green onion
- 1-2 Cheongyang peppers (Korean chili peppers)
Seasoning
- 2 Tbsp Cooking oil
- 0.5 Tbsp Minced garlic
- 0.5 tsp Salt
- 1 Tbsp Perilla oil (or sesame oil)
- 1 tsp Toasted sesame seeds
- 2 Tbsp Cooking oil

Cooking Instructions
Step 1
First, gather all your ingredients! You’ll need fresh enoki mushrooms, a green onion, and some Cheongyang peppers for a touch of heat.
Step 2
Wash the Cheongyang peppers and green onion and slice them thinly. For the enoki mushrooms, carefully trim off the bottom brown part (usually indicated by blue on the packaging) and give them a quick rinse under running water.
Step 3
Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the sliced green onion and stir-fry gently on low heat until fragrant, creating infused green onion oil. Tip! If you’re on a diet, significantly reduce the amount of oil. Alternatively, lower the heat when stir-frying the mushrooms and let their natural moisture cook them.
Step 4
Add all the prepared enoki mushrooms to the pan with the fragrant green onion oil. Increase the heat to high and stir-fry quickly until the mushrooms release their moisture and become tender.
Step 5
As you stir-fry, if the enoki mushrooms are clumped together, use chopsticks to gently break them apart and ensure they cook evenly.
Step 6
Once the mushrooms have softened slightly, add 0.5 tablespoon of minced garlic, the sliced green onion, and Cheongyang peppers. Continue to stir-fry quickly to combine the flavors.
Step 7
Turn off the heat. Drizzle in 1 tablespoon of perilla oil (or sesame oil) for a nutty aroma, and sprinkle 1 teaspoon of toasted sesame seeds over the top to finish.
