Ingredients

  • 2 bunches fresh spinach
  • 1 Tbsp coarse salt (for blanching)
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce (regular or light)
  • 2 Tbsp sesame oil
  • 1/2 Tbsp fine sea salt or regular salt (for seasoning)
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the fresh spinach. Remove any yellow or wilted leaves and trim the root ends cleanly. Wash the spinach thoroughly under running water to remove all dirt, then gently press to remove excess moisture.

Fill a deep pot with enough water to fully submerge the spinach. Add 1 tablespoon of coarse salt and bring the water to a rolling boil over high heat.

Once the water is boiling vigorously, add the prepared spinach and blanch for just 1 minute. Be careful not to overcook, as this will make the spinach mushy and reduce its nutritional value.

Immediately remove the blanched spinach from the hot water and drain it. Do not rinse with cold water. While it’s still hot, gently squeeze out as much water as possible using both hands. This step is crucial to prevent the seasoned spinach from becoming watery.

To the squeezed spinach, add 1 tablespoon of fragrant minced garlic.

Add 1 tablespoon of soy sauce for a savory depth. You can use regular soy sauce for a richer color or light soy sauce for a milder taste.
