Today, we’re making a fantastic dish perfect for housewarming parties or any special celebration: Japchae! This recipe is designed to be incredibly quick and easy, with a special tip to prevent the noodles from becoming mushy. Get ready to impress your guests!

First, prepare your dangmyeon for 4 servings. To ensure the noodles don’t stick together and cook evenly, soak them in cold water for about 20 minutes. Soaking them beforehand makes them wonderfully soft and chewy when cooked.

Next, wash the half bunch of spinach thoroughly. Bring a pot of water to a boil with a pinch of salt. Briefly blanch the spinach for just 30 seconds to 1 minute – don’t overcook it, or it will become too soft. Immediately rinse the blanched spinach in cold water and squeeze out any excess moisture.

Now, let’s stir-fry the vegetables. Heat about 1.5 Tbsp of cooking oil in a pan over medium-high heat. Add the blanched spinach, julienned carrots, sliced onion, red and green bell peppers, and sliced king oyster mushrooms. Since these vegetables are often eaten raw, we only want to stir-fry them until they are slightly wilted, maintaining their crispness. Once lightly cooked, remove them from the pan and set aside.

Add the remaining 1.5 Tbsp of cooking oil to the same pan. Drain the soaked dangmyeon and add them to the pan. Stir-fry the noodles over medium-low heat, ensuring they don’t stick to the bottom. Once the noodles become translucent, add the soy sauce, sugar, and a pinch of black pepper. Continue to stir-fry until the seasoning is evenly distributed and coats the noodles. Be careful to prevent the noodles from burning.

This is the final step! Add the stir-fried vegetables and pork back into the pan with the seasoned noodles. Toss everything together gently, stir-frying until all the ingredients are well combined and heated through. This step brings all the flavors together.
