An incredibly simple side dish that can be made quickly in the morning. This recipe is designed for speed and ease, making it an ideal addition to your lunchbox or a quick flavor boost for any meal.

  • 1 bunch chives (approx. 100g)
  • A little carrot (approx. 20g)

Seasoning

  • 1 Tbsp red pepper flakes (gochugaru)
  • 1.5 Tbsp soy sauce for soup (guk-ganjang) or regular soy sauce
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

First, thoroughly wash the chives and carrot. Cut the chives into bite-sized pieces, about 4-5 cm long. Thinly julienne the carrot. Preparing the ingredients like this makes them easier to mix and more pleasant to eat.

In a small bowl, combine all the seasoning ingredients: 1 Tbsp red pepper flakes, 1.5 Tbsp soy sauce for soup, 1 Tbsp sesame oil, and a pinch of toasted sesame seeds. Mix them well to create the dressing. Using soy sauce for soup (guk-ganjang) adds a deeper umami flavor, but regular soy sauce can also be used.

Place the prepared chives and carrot in a mixing bowl. Instead of pouring all the seasoning at once, it’s important to add it in 2-3 portions while gently tossing the ingredients. It might look like too much seasoning initially, but adding it gradually helps prevent an overly salty taste and ensures it coats everything evenly – this is key to perfect seasoning.

By adding the seasoning in stages and mixing gently, you’ll keep the chives crisp and ensure the dressing is evenly distributed, making every bite flavorful. If it tastes a bit bland, add a little more soy sauce. If you prefer it spicier, add a bit more red pepper flakes. This freshly made chives salad is delicious right away and is an excellent side dish for lunchboxes.
