An unbelievably simple and lightning-fast soup recipe. We’ve adapted the chive egg drop soup recipe from ‘SikJJMom’ for ultimate ease and deliciousness. Enjoy a clear, refreshing broth with tender eggs and fragrant chives – a comforting dish that soothes your soul.
Ingredients
- 2 large eggs
- 1 handful of chives (about a 1cm thick bundle)
- 250ml water (1 mug)
- 0.5 Tbsp soy sauce
- 0.5 Tbsp cooking wine (mirin)
- 1 Tbsp dried anchovy powder
- 0.5 Tbsp dried shrimp powder (optional, for extra umami!)
- A pinch of minced garlic
- A dash of black pepper (2 shakes)
- 0.5 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare the chives. For a single serving, a handful tied together about 1cm thick is perfect. Cut them into roughly 6cm lengths. This size is easy for everyone to eat.
Step 2
Pour 1 mug (250ml) of water into your ramen pot or a small saucepan. Add 1 Tbsp dried anchovy powder, 0.5 Tbsp dried shrimp powder (you can omit this if you don’t have it, but it really boosts the flavor!), 0.5 Tbsp soy sauce, 0.5 Tbsp cooking wine, and a pinch of minced garlic. We used regular soy sauce for a mild, single-serving portion.
Step 3
Turn on the heat to the ramen pot and bring the broth to a boil. Once it’s bubbling vigorously, proceed to the next step.
Step 4
Carefully crack two eggs directly into the boiling broth. Use a spoon to gently break the yolks, then stir just 2-3 times. Be careful not to over-stir; you want the egg to form soft curds, not completely disperse into the soup. Let it cook undisturbed for about 1 minute until the egg is mostly set.
Step 5
Now, add the prepared chives to the pot. Let them simmer for just 1 minute. As soon as the chives are slightly wilted, turn off the heat. Overcooking them will make them lose their fresh texture and nutrients.
Step 6
You might notice some foam on the surface. This is a natural result of the anchovy powder and doesn’t need to be skimmed off. It will dissolve back into the broth, enriching its flavor.
Step 7
Finally, stir in 0.5 Tbsp of sesame oil and give it a couple of shakes of black pepper. Your delicious chive egg drop soup is ready to be enjoyed immediately! 🙂
